Colman’s Mustard Heats Up National Chicken Month!


With so much focus at this time of year on back-to-school lunches and after-school snacks, people often forget about making healthy, delicious dinners. Colman’s-style Baked Chicken Kiev

 












For the filling
5oz Ricotta cheese
4oz butter, softened
Zest and juice 1 lime
2 cloves garlic, finely chopped
1 heaped teaspoon Colman’s Mustard Powder
1 tablespoon finely chopped parsley
Salt and pepper

4 Chicken breasts

For the coating
9oz breadcrumbs
1 medium free-range egg whisked with 4fl oz milk
2oz plain flour

Preheat oven to 375 degrees
In a small bowl, mix together all the ingredients for the filling
Place the chicken breasts on a board, slice them lengthwise and open them out
Divide the mixture from the small bowl into 4 equal parts
Place a spoon of mixture in the center of the chicken breast.
Fold all the sides of the chicken breast over the mixture to ensure the mixture is completely wrapped.
Repeat with the remaining chicken breasts.
Take each filled breast and dust lightly with flour and dip each one into the beaten egg and milk
Final roll carefully in the breadcrumbs, then back into the egg and milk and again roll in the breadcrumbs
Place the check breasts on a greased baking tray and bake for 30 minutes
Remove and let the chicken rest for 5 minutes
Serve with your favorite salad or vegetables for a well rounded meal.
